Choosing the Right Catering Style for your Culinary Journey: A Guide to Feeding (and Serving) Your Guests in Style

When planning an event—whether it's a board meeting, chic wedding, team appreciation reception, or a high-energy corporate gala—food and drink are always at the heart of the celebration. But catering isn’t just about what you serve—it’s also about how you serve it.

The catering style you choose sets the tone for the entire event. Are you going for something formal and refined? Casual and interactive? Something in between? As a professional caterer, Straight to the Plate Catering (STTP) has worked across all formats, and we can tell you: there’s no one-size-fits-all approach. Your service style should be as unique as your event is!

Here’s a breakdown of the most popular catering styles, their pros, their cons (which STTP’s experience can help you overcome), and the events they work best for. Not sure how you want your Culinary Journey to be presented at your next event? Give us a call and we can help you decide!

PLATED SERVICE

Guests are seated at tables and served individually plated meals by the STTP service team, typically in multiple courses.
Best For:
Galas, formal weddings, fundraisers, or high-end corporate events.

Pros:

  • Feels elegant and upscale

  • Controlled pace and presentation
  • STTP offers an entrée selection to accommodate those with dietary restrictions.

Cons:

  • Typically, more expensive due to staffing and logistics

  • Generally, a longer service, so a thought to consider if you have timing constraints

Pro Tip:

Offer dual entrees or “surf and turf” plates to keep things exciting while staying structured.

BUFFET STYLE

Guests select from a full spread of dishes laid out on long tables, with STTP staff assisting in service behind the buffet.
Best For:
Company events, any wedding (especially large guest counts), family reunions, or community events.

Pros:

  • Wide variety of food choices

  • Cost-effective compared to plated meals

  • Flexible for dietary needs

  • STTP includes a custom-curated buffet decor to complement your event

Cons:

  • Can create lines or bottlenecks if tables are not released appropriately by your host

  • Less formal presentation

Pro Tip:

Use multiple serving stations or duplicate buffets on each side of the space to keep things flowing smoothly.

ACTION STATIONS

Multiple interactive stations where chefs prepare & serve small plates. STTP is famous for some signature sweet & savory stations including the STTP Donut Machine, Craft Sliders, Signature Mac & Cheese, and Hanging Cannoli.
Best For:

Fun weddings, holiday parties, chic casual parties, brand launches, or social corporate events.
Pros:

  • Highly customizable and fun

  • Encourages guest movement and interaction

  • Great variety without overwhelming one serving line

  • Adds a show or entertainment element to the food

Cons:

  • Requires more space and equipment

  • Can become crowded if the space is insufficient

Pro Tip:

Make sure each station is visually distinct and operated by one of our STTP staff who can engage with guests. The more interactive, the better.

4. Family-Style Service

Large platters of food are served directly to tables, and guests help themselves, much like a dinner at home.
Best For:
Relaxed weddings, rehearsal dinners, holiday parties, or intimate gatherings.

Pros:

  • Encourages sharing and conversation

  • Comfortable, relaxed dining atmosphere

  • Slightly more formal than buffet, but still communal

Cons:

  • Requires larger tables to accommodate serving dishes

  • Centerpieces may get in the way
Pro Tip:

Coordinate with your decor team to keep centerpieces low and practical. You’ll want room for the platters and the conversation.

5. Passed Bite Reception

Guests mingle while servers circulate with bite-sized appetizers.

Best For:

Cocktail parties, receptions, networking events, art openings, or modern weddings.

Pros:

  • High energy and social vibe

  • Perfect for creative, elevated bites

  • STTP offers an extensive array of bites to accommodate any dietary restriction

  • It can be added to any other catering style to create a cocktail hour upon guest arrival.

Cons:

  • It may feel too light of a meal for some guests when not paired with something more substantial
  • Depending on the event, some guests may be expecting a sit-down experience

Pro Tip:

Pair passed apps with a grazing or action station, or two, to ensure everyone stays full (especially if there’s an open bar!).
